Recipes: Spinach Casserole

"This is an easy casserole that tastes great."

Spinach Casserole
Serving size not stated
1.5-pounds fresh spinach, or 2 (10-oz) boxes of frozen chopped spinach
1 Tablespoon olive oil
1 Tablespoon butter
1 large onion
4 cloves garlic
2 Tablespoons flour
3/4 cup half-and-half or sour cream
1/4 teaspoon ground nutmeg
1 cup grated Parmesan cheese
Salt and pepper to taste

  1. In a wide frying pan over Medium heat, combine oil and butter.
  2. Add onion and garlic, stirring until soft.
  3. Stir in flour, blending well. Remove from heat.
  4. Blend in half-and-half (or sour cream).
  5. Add nutmeg and spinach; return to High heat. Stir vigorously until bubbling.
  6. Remove from heat. Mix in 1/2 cup of the Parmesan, and the salt and pepper.
  7. Serve hot, sprinkled with the remaining 1/2 cup Parmesan.
